    This is bad. If I got this billed as a French omelette in a diner for like $6, I'd eat it. If I got this billed as a French omelette in a two star restaurant for like $25, I'd take a photo, post it to their socials, and walk out without paying. The top should be smooth, and the inside should be creamy.

    Why does everyone specify "sourdough discard?" Discard is the exact same thing as sourdough, unless the point is you don't have to feed it prior to using. Can someone clarify that for me. Thank you.

      You’re correct. That’s what it means when they use sourdough “discard” - it means unfed straight from the fridge.

    I do it similar, but before folding, I like to put it under a salamander or broiler (toaster oven works great). This is especially good for melting cheese fillings. It only takes 30 seconds and then pull it out and fold onto a plate. This will make a very fluffy omelette!

      Respectfully, no. This is like making pasta or bread from scratch. It appears daunting, but once you give it a try you realize, geez. This is so insanely simple. I should’ve tried doing this a long time ago. You don’t need to use chopsticks. Use something else if you want, but definitely try to make this. It’s much easier than you think.

      @@davidgray2845 uhhh that was kinda my point... usually making french omelette is done by practicing the technique. The video looks like it uses other things to minimize variation for a more consistent output. Which is more desirable in a restaurant setting.

    Extra virgin olive oil instead of rapeseed oil. EVOO is perfect for pan cooking eggs because you’re only using medium heat. Plus, no other oil is healthier than EVOO. C’MON MAN!

    Not a bad method. Certainly easier than the classic French omelette method that Jacques Pepin teaches. That one is difficult.
